Who is ready for the Super Bowl!? I am and I’m bringing these crispy brussel sprouts with bacon and cheese!
While I actually enjoy watching football, the main reason I love the Super Bowl is for all the good eats!The only thing that would make the Super Bowl better is if it was on a Saturday or work wasclosed on Monday.
Drinking too much on Sunday and then going to work on Monday is not fun. Trust me, I have been there quite a few times.

Since Super Bowl parties are focused so much on food, and a lot of that food we might not usually eat, Iwanted to create something people couldmunch on that wouldn’t make them feel sluggish.
That’s where these crispy brussel sprouts with bacon and cheese bites come in. With veggies, fat, and a little protein, they make a great addition to the fried foods, chips and dip, and beer haha.
Brussel sprouts contain more cancer-fighting nutrients than any other vegetable family. They also supply a good amount of folate (folic acid), potassium, vitamin K, and beta-carotene.
Pair them with some bacon and cheese and no one will even care it’s a veggie based appetizer. I’ll admit I’m not a huge bacon person, but I love ButcherBoxbacon and this combo is great. And quite addicting. A little sweet and salty with a little bite from the blue cheese.

Crispy Brussel Sprout with Bacon and Cheese
The easiest 3 ingredient appetizer (plus some oil and salt and pepper).Perfect to grab a few, pop them in your mouth, andcontinue on with partying or watching the big game, without making a complete mess. Gluten free and low carb too!
Here is what you need:
- brussel sprouts
- blue cheese
- bacon – I love ButcherBox
- oil
- salt and pepper
First start out by roasting your brussel sprouts. Trim off the end and cut them in half. You want to look for medium size sprouts – not too large to pop in your mouth, but not too small to top with the bacon and cheese.
Toss with some oil and salt and pepper and place face down (cute side down) on a parchment paper lined baking sheet. This will help the inside get golden brown. Roast for 12-15 minutes until mostly cooked through.
Roasting Brussels sprouts is the way to go. It brings out a sweet caramelization and makes them crispy and crunchy around the edges. You can now forget that days of your mom steaming brussel sprouts and that horrible stench that lingered throughout the house.

While the brussel sprouts roast, prep the cheese and bacon. Then, take out the Brussels and flip them over so the cut side is face up (the inside). Next, top with a little cheese and a piece of bacon and spear a toothpick through it. Try to make sure they are standing up so the cheese doesn’t melt off if on it’s side.
Finally, pop them back in the oven and roast for another 10-12 minutes until bacon is nice and crispy.

Substitutions Crispy Brussel Sprout with Bacon and Cheese
This brussel sprouts appetizer is really straight forward and simple, but you could totally make it your own and change it up. Here are a couple suggestions I have:
- bacon – I used pork bacon, but you could use turkey if you like that
- cheese – you either love or hate blue cheese (I love it!). Feel free to use another creamy cheese like goat, feta, or even brie.

Crispy Brussel Sprouts with Bacon and Cheese

ingredients
- 1/2 pound trimmed and halved brussel sprouts (about 2 1/2 cups)
- 1/2 tablespoon avocado oil
- 1/3 cup blue cheese crumbles (about 1.5 ounces)
- 2 pieces of bacon (cut into 1 inch pieces)
- salt and pepper, to taste
instructions
Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
Toss the halved brussel sprouts with avocado oil and some salt and pepper. Place face down (cut side down) on a parchment lined baking sheet and roast for 12-15 minutes. While the brussel sprouts cook, prep the cheese and bacon as needed.
Take brussel sprouts out of the oven and flip over so the halved side is up (the flat part). Take about 1/2-1 teaspoon of blue cheese, or a small crumble, and top each brussel sprout. Then top with a piece of the bacon and spear with a toothpick. Try to make sure they are standing straight up so the cheese does not melt out the sides. I also like to sprinkle the tops with a little pepper.
Put them back in the oven for 10-15 minutes or until bacon is crispy. Let cool for a couple of minutes and serve!
