Pasta is ultra comfort food in my opinion. And this time of year is all about comfort food! I love the flavor of this recipe. It’s loaded with all the good flavors of White Chicken Enchiladas like Green Chiles, Black Olives, a little sour cream, and melted jack cheese!

Ingredients for White Chicken Enchilada Pasta Recipe

  • Angel hair pasta
  • Olive oil
  • Butter
  • Onion
  • Green chilies
  • Creole seasoning
  • All purpose flour
  • Chicken broth
  • Chicken breasts
  • Sour cream
  • Shredded Jack cheese
  • Optional toppings: sliced black olives, chopped cilantro

The fact that it is half way through November already blows my mind. I feel like we just started school and here we are about to embark on the holiday season. That’s crazy how fast it passes! Is it because I have 4 kids that keep me so busy now?

But this holiday season, I plan to really enjoy the little moments with my kids. It’s so easy to get all wrapped up in the things to do and the places to go and forget about what’s really important. For me, that is spending time with those I love the most. I plan on enjoying those special times like drinking hot chocolate and watching Christmas movies together. And it won’t be too long before I start blaring the Christmas music too. This season passes so quickly, so I’m really going to make it count.

Can we talk about Christmas movies quick? I adore The Hallmark Channel. I’m slightly obsessed with their Christmas Movies and I wait and wait for them. In fact I’m known to fill up our entire DVR with them much to my husband’s chagrin.

Are you a sappy Christmas movie love too? There’s nothing better than when the snow is falling, the fireplace is on and the Christmas movies are rolling. Now, this all has to wait until the kiddos are in bed right now in my life. They don’t let me sit around and watch movies much! Someday I’ll be able to relax in the middle of a Saturday afternoon doing this, right? Someday. I’ll try not to wish these busy days away to much!

And while we are having fun savoring the little moments this holiday, we will be eating this little pasta dish again too! It was really a hit! I love taking flavors from other dishes and creating new dishes with them. Pasta is the perfect blank canvas to do that.

Tools Helpful When Making White Chicken Enchilada Pasta!

White chicken enchiladas have a white sour cream sauce and green chilies which really pair perfectly with pasta. My kiddos are also all about pastas with a white sauce. They loved it! And no fear, if you are not a fan of cilantro or black olives, just leave them out and you still get an awesome flavored pasta!

White Chicken Enchilada Pasta

Ingredients

  • 12 oz. angel hair pasta
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 medium onion chopped
  • 1 4 oz. can green chilies
  • 1 tsp creole seasoning
  • 2 tbsp all purpose flour
  • 1 14.5 oz. can chicken broth
  • 2 chicken breasts cut into 1 inch pieces
  • 1/2 cup sour cream
  • 1 1/2 cups 8 oz. shredded Jack cheese
  • Optional toppings: sliced black olives chopped cilantro

Instructions

  • Fill a large pot with water and bring to a boil for pasta.

  • In another large pot, heat olive oil and butter over medium-high heat.

  • Add chopped onion and green chilies. Season with 1/2 tsp. creole seasoning and saute for about 7 minutes or until onions are clear.

  • Add flour and stir for about a minute.

  • Stir in chicken broth. Bring mixture to a boil and then add chicken, seasoned with 1/2 tsp creole seasoning. Cook over medium heat for about 15 to 20 minutes. (Keep mixture at a simmer).

  • While chicken is cooking, boil pasta and drain.

  • Once chicken is cooked, add sour cream and 1 cup shredded cheese to chicken mixture and stir. Let simmer for 5 minutes. Add pasta and stir to evenly coat with sauce.

  • Serve with a little shredded cheese on top, cilantro, and black olives.

    Tried this recipe last night but had to change a few things after realizing I didn’t have any green chilies at the last minute. First thing I did different was diced up the chicken in 1 inch cubes and placed in a bowl and added some olive oil and sprinkle some creole seasoning I had made up and sprinkled some cumin in and let sit on counter for 5 to 10 minutes than sauted in oil and butter in a skillet til lightly browned. Than took chicken out of skillet and placed on plate and sat on counter top til time to add to mixture. I used green bell pepper (in place of the green chiles) diced up and sauted with the onions and sprinkled some cumin in too. I also added about a 1/4 c. of whipping cream in with the sauce for extra richness. Than followed the rest of the recipe. Turned out great! My son even said it was his new favorite recipe now! My husband and I had the leftovers tonight and it was even better tonight. Thanks for sharing this delicious recipe!!

    Thanks for all these pasta-chicken recipes without tomato sauce. My daughter-in-law is not able to eat any tomatoe sauces but loves white sauce on pizza. I will try some of these recipes when they come for dinner, or when I have a pot luck. (That’s a term used in Minnesota for any group gathering of people when everyone brings a food to share.)

    What exactly is creole seasoning? Would it change the flavor a lot if left out?

      Hi Krystal! Creole seasoning is a mixture of spices. It has salt, red pepper, garlic powder, and onion powder. In some areas, you might find “seasoned salt.” If you don’t have access to this or don’t want to purchase it, you can just use salt and pepper to season. Thanks!!

    We just tried this for supper (with added corn and black beans, because my husband goes crazy for anything vaguely Tex-Mex with corn and black beans added) and it was a hit!
