FREQUENTLY ASKED QUESTIONS ABOUT THIS RECIPE:

WHAT SIZE SHEET TRAY DO I NEED?

An 18x13x1 inch sheet tray is perfect for this recipe. Yup! We’re gonna make this a big ole sheet pan cake.

You can try using a regular 9×13 pyrex if you want. I don’t think it will be quite the same, though, and it will affect the baking time, so keep that in mind.

CAN I USE A DIFFERENT SODA?

Sure! Any lemon-lime soda like Sprite or Sierra Mist works well.

Ginger ale can also be a good substitute. If you’ve got a favorite soda in these options, then that’s the one you should go for. This is all about your taste buds, after all!

ANY ADDITIONS?

Oh, the possibilities are endless! I’ve got some great ideas here to get you started in the right direction.

  • A scoop of vanilla ice cream on the side
  • Fresh fruit like berries or lemon slices for garnish
  • A drizzle of simple sweet lemon glaze
  • Sprinkle of powdered sugar for a sweet finish
  • Whipped cream for extra creaminess
  • Lemon or lime juice for more citrus flavor
  • Chopped nuts for added texture
  • A layer of lemon curd under the frosting
  • Sprinkle of almond extract for a nutty aroma
  • Dollop of lemon or lime marmalade on top

ANY SUBSTITUTIONS?

Sure thing! It’s a short list, but it should take you places, haha.

  • Cake flour for a lighter texture
  • Almond extract instead of vanilla for a different flavor
  • Brown sugar for a deeper sweetness
  • Melted butter instead of vegetable oil, this will make the cake a little more dense
  • Gluten-free flour for those with dietary restrictions
  • Diet soda for a lower-calorie version
